Quinoa and Tofu Balls

Happy Sunday Everyone!

As promised this week I have a very simple but tasty and incredibly filling recipe that you can whiz up quickly after a long day at work, or serve at a dinner party for your friends.  What I’m saying is that its versatile, you can dress it up or down.

You may be thinking tofu and quinoa thats a weird combination to put in a ball.  Well I wanted to make something that had a cream cheese taste and texture in the middle with a crispy outside.  This is how tofu comes into play.  When mixed with the quinoa and spices it gives a cream cheese texture and taste.  Also probably good to mention that these balls are PACKED with protein.  Quinoa and Tofu and known in the plant world as containing a lot of protein.  These are a great thing to make if your trying to go meat free or your just starting your plant based lifestyle, as they are super filling and dense.  I love to serve these on either a bed of lettuce for a salad or even in a wrap, get creative!

 

Ingredients:

  • 1 mug of cooked quinoa
  • 1 teaspoon of cayenne pepper
  • 1 teaspoon of turmeric
  • 1 teaspoon of cumin
  • 1 teaspoon of coriander
  • 1 teaspoon of salt
  • 1 teaspoon of pepper
  • 3 tablespoons of nutritional yeast
  • 250g tofu
  • splash of balsamic vinegar
  • 2 tablespoons flour
  • Sweet chilli sauce to serve with (optional)

Method:

The method, like a lot of my recipes, is super simple.  Place half the quinoa with ALL other ingredients into a food processor or blender and pulse till smooth.  You don’t want to blend too much and turn it into  paste but you want it smooth.  Place this mixture in a bowl and add your quinoa.  Mould this gooey goodness into small balls and roll in flour before frying for around 4 mins each side.  You are looking for a golden brown and crispy edge to them.   At this stage I love to pour sweet chilli sauce all over them.

Thats it!  Its that easy but insanely delicious.  Packed with plant protein and fibre to really fuel your body the right way.
