Vegan Macaroni and Cheese

The ULTIMATE comfort food, made healthy and vegan, but NEVER compromising on taste. Sometimes you just NEED mac and cheese and nothing else will satisfy you!  You can eat this all day every day, full of goodness!  There's not much more to say, just go head first!

 

Ingredients:

  • 250g Pasta (I'm using Root One chickpea pasta)
  • 50g soaked cashews
  • 100g firm tofu
  • 1/2 cooked sweet potato
  • Juice of half a lemon 
  • 1 teaspoon salt
  • 2 tablespoons flour
  • 5 Tablespoons Nutritional yeast
  • 1/2 mug almond milk
  • chilli to taste

Method:

First add all ingredients apart from the pasta into a blender and blend until very smooth.

Place the gooey cheesy goodness into a saucepan and cook on a gentle heat.  The sauce should be think but not too think that it doesn't run off the spoon.

Cook the pasta until slightly undercooked and drain.

Add the sauce and pasta into a baking dish and bake until golden on top (10 mins).

DONE!  Such simple and quick comfort food that you can whip up whenever you need it!
