Broccoli Flat Bread
Sorry I haven’t posted in a while I’ve been away for a bit. I’m back to it though and have spent a couple of days in the kitchen creating new and delicious recipes to share. Im currently in the process of creating an eBook of all my recipes, I just think it will be a great thing to consolidate all my favourite recipes in.
Anyway, this week I have been seriously busy so I have needed to take a lot of meals on the go. This flatbread I created as I was bored of rye bread, I do LOVE rye bread but eating it everyday gets a bit dull and like I said I like interesting food! This is super easy to make and so delicious, as well as containing a whole load of hidden greens. You can literally fill or top this bread with anything that takes your fancy.
- 1 head of broccoli
- 6-8 heaped tablespoons of flour
- a dash of water
- 2 tablespoons of nutritional yeast
Its this easy: Take your broccoli head and cut it into chunks before adding it into a blender to pulse to a flour consistency. This is where you may need to add a little water to help it blend smoothly. Place this broccoli flour into a bowl where you need to add your nutritional yeast and flour, tablespoonful at a time. Mix until it forms a sticky dough thats easy to shape but not too stiff and dry.
Line a baking dish with baking paper and then flatten your dough into the dish. It should be around 1-2 cm tall. Bake this at 180 degrees for 30-40 minutes or until the side begin to get crusty. Take it out of the oven and cut into cute squares. There we have it simple, easy but mouthwatering flatbread packed full of broccoli. You could give this to broccoli haters and they wouldn’t taste the broccoli!
I like to add different toppings all the time but my favourites are caramelised onions, chickpeas and tahini with chilli and red pepper pesto. Get creative and come up with your own toppings and share them with me I would love to see them!
