Almond Yoghurt Loaf (Vegan, Gluten Free, Keto friendly, Paleo Friendly, EVERYTHING FRIENDLY)

For those of you who follow me on Instagram, you will know by now the huge diet changes I am HAVING (not choosing) to make due to health issues.  


Anyway, I was told by my specialist to embark on a Ketogenic diet for 12 weeks.  I'm not going to lie I cried a little at the appointment at the thought of no sweet potatoes.  After many days of anger towards him, I decided to try it and give it a go in the hope it may cure me.  I must stress, I am doing this PURELY for health reasons and I do not believe that it is safe/healthy for any normal human being to take out carbohydrates, in fact, it still makes me angry.

Ive gone through the mourning phase and come out the other end creative, and ready to replicate 'carby' recipes without the carbs.  Great news, I did it.  In fact this loaf is so goddam delicious I will be forever making it even after Keto months!




  • 250g ground almonds
  • 1 flax egg (3 tablespoons flaxseed mixed with 3 tablespoons water and left for 5 mins)
  • 250g soy/almond yoghurt
  • 100g almond butter
  • 1 tablespoon coconut nectar
  • 1 teaspoon baking powder
  • 1 teaspoon vanilla extract
  • 1/2 mug almond milk


First ix the ground almonds with the soy yoghurt and stir well.

Next add the rest of the ingredients and mix until no lumps.

Pop it in the oven for 40 mins at 175 degrees or until the mixture is holding together when prodding a knife into it. 

Decorate by melting 100g dark chocolate with 1 tablespoon of almond butter and a a splash of almond milk.
